What is drip coffee (pour-over)?

This is a style of coffee brewed by pouring hot water over ground beans using a device called a dripper. Even with the same beans and recipe, the flavor can change just by changing the filter to paper, metal, cloth, etc. Not only can the taste change depending on the temperature of the hot water, the amount poured, and the grind of the beans.

About coffee roasting

Roasting is the process of applying heat to coffee beans in their raw (green) state to turn them into the brown beans we generally call coffee beans. Generally, there are three types of roasting: light roast, medium roast, and dark roast. We won't go into the details here, but roughly speaking, light roasts are characterized by a refreshing fruity flavor, medium roasts by a balanced sweetness, and dark roasts by a full-bodied flavor.

We roast the beans while keeping in mind whether they are good for hand drip, latte, or blending, and what they would taste good with when pairing them with the coffee.

About green beans

CHAMI deals with specialty coffee. Specialty coffee is coffee that has been properly cultivated, harvested, processed, selected, and quality-controlled in the producing country, and that uses raw beans with very little contamination by defective beans. In addition, it is required that it is properly extracted and that the characteristic wonderful flavor characteristics of the producing area are expressed. In addition, to distinguish it from general coffee, the cup quality is evaluated based on the cup evaluation criteria of COE (Cup of Excellence), and coffee that meets or exceeds the criteria is considered specialty coffee.
